Bill Gunston, The Illustrated Encyclopedia of Aircraft Armament, Orion Books, New York, 1988. This book provides details on many weapons, as well as a description of how they work.

W. Chao, "MD-11 Vacuum Waste System Air Flow Analysis," AIAA Paper 93-1163, Feb. 1993. If you need to know how the toilet works on an airplane, this paper provides a description.
